About Almenland Stollenkäse
Matured inside the mountain
You can now strike gold in an Arzberg silver mine. It is here that the unique cheese variety Almenland Stollenkäse is quietly matured to golden perfection at a constant temperature of 10° C. This process takes place deep within rock that is millions of years old. The cheese is made from the finest of raw materials – the milk of local cows and sheep – at the Almenland Alpine Dairy belonging to the Leitner family. Stored in the the Franz-Leopold Gallery of the former Arzberg silver mine, this cheese develops an incomparable aroma as a result of this altogether unique maturing and ripening process. All that needs to be done to the cheese wheels is to wash them with salt water or pickled cabbage brine now and then, and to turn them regularly. The ripening time alone brings them to the peak of perfection.
Wear warm clothing when you come down here, because the Franz-Leopold Gallery, 100 metres under the ground is a cool place during every season of the year. This Almenland Stollenkäse experience tour is truly amazing with its deep mine atmosphere. Guests always have endless questions about the age, the ripening process and the manufacture of the cheese and about what has to be done before it can be placed down here in the ancient stone passages. They discover this and a great deal more as they proceed through this historic mine. Back at the pithead building, constructed in a traditional old timber style, the visitors can reflect on their remarkable experience and even taste the fine cheese for themselves.
